Sausage casserole

  • 100g streaky bacon
  • 225g sausages
  • 225g apples pealed, cored and sliced
  • 225g tomatoes, skinned and slices
  • 1 green pepper seeded and sliced
  • 45ml stock
  • salt and pepper

 

  1. Cut the rind off the bacon and wrap the sausages, fry them or brown under the grill.
  2. Place in a casserole dish, arrange the apples, tomatoes and peppers over the top in layers.
  3. Add the stock and cook at 200c for about 40 minutes.
