Sausage casserole

  • 100g streaky bacon
  • 225g sausages
  • 225g apples pealed, cored and sliced
  • 225g tomatoes, skinned and slices
  • 1 green pepper seeded and sliced
  • 45ml stock
  • salt and pepper
  1. Cut the rind off the bacon and wrap the sausages, fry them or brown under the grill. If you take sausage in natural casing (local producers try to buy from big companies like DCW Casing, details at dcwcasing.com/), you can use them even wrapped.
  2. Place in a casserole dish, arrange the apples, tomatoes and peppers over the top in layers.
  3. Add the stock and cook at 200c for about 40 minutes.
