Vegetable soup

Ingredients

  • 2l vegetable stock
  • 1 butternut squash (peeled and chopped into cubes)
  • 2 sweet potatoes (peeled and chopped into cubes)
  • 1 swede (small, peeled and chopped into cubes)
  • 4 carrots (medium, peeled and chopped into cubes)
  • 1 courgette (peeled and chopped into cubes)
  • 1 onion, chopped
  • 2 bay leaves

Method

You will need a large pan as this makes loads

Fry the onion in a little oil until softened

Peel and chop rest of vegetables into cubes

Add stock to the onion and then add the rest of the veg and bay leaves

Bring to the boil and simmer for 20-25 minutes (until all of the vegetables are tender)

Remove bay leaves and blend to desired consistency
